This summer at Aspen Meadows Resort I have gained extensive experience that I could not have gotten without great training. The two big areas we focused on were banquets and conference services. I learned how to set up big banquet dinners, serve food and wine for receptions and dinners, and how to break down these events. For conference services we would set up meeting spaces, it involved moving rooms around so they would have the correct tables and chairs. Conference services also taught me about the importance of food hubs. I also got great experience being in charge of breakfast and running room service.
A great accomplishment I had was being able to set up a lunch in our Marble Garden during Ideas Festival. I knew everything that needed to be set out for the lunch by looking at the BEO. It was set up for 100 people and I never had a moment of panic because I had backups of food and utensils. I was proud of myself for being able to run the lunch smoothly.
Something that I learned from this experience is to always have a positive attitude no matter how long the day is or how tired you are. You'd be surprised how one persons mood can affect the rest of the group. I also learned that you really have to lift with your legs when moving tables and chairs because you're back will hurt the next day if you don't. If you are sore the next day it just makes work more difficult.
Advice for others...
My advice would be to pick an internship thats a little out of your comfort zone. I've never worked at a big hotel before or been to Colorado before. If you do something totally new it could make your internship better and even more rewarding. Another piece of advice I have is to become friends with other interns because they can also make wok more enjoyable.
